Happy Monday, friends! Today marks my seventh day on my January Whole30, so I thought I’d give you a little update on how it’s going. As I mentioned in this post, I like to do some type of detox/cleanse in January to calm down the post holiday inflammation in my body and be more proactive with managing my autoimmune symptoms during the cold winter months, during which I typically feel pretty crappy. This is my second Whole30 and it’s so much easier the second time around because I know how things work, where to find Whole30 approved products , and generally how I’ll feel during it.
What I’m Eating…
Each week, I tend to pick something for breakfast and eat it every day. My go-to breakfast most days whether I’m on a Whole30 or not is a slice of sweet potato, sauteed spinach, Wholly Guacamole, two overeasy eggs, and hot sauce. It’s so satisfying and is such a great combination of protein, carbs, healthy fat and veggies. It was my breakfast of choice every morning for the first week (and some dinners too but we’ll get to that in a minute!).
For dinner on day one, I made bowls with cauli-rice, squash, chicken, Wholly Guacamole, and egg and hot sauce. My husband added black beans to his and the kids ate chicken and black bean quesadillas with guacamole.
On day two, I made a beef roast in my Instant Pot one night and roasted some potatoes and carrots in the oven to go with it. I served it with a simple salad topped with Primal Kitchen’s Ranch.
Days three and four, I had my go-to breakfast because I didn’t feel like cooking and I wanted something easy and on day five, I had a salad I put together on the Whole Foods salad bar (will all compliant ingredients!!).
For lunches, I typically have leftovers from the previous night and change it up a bit, like making a spinach salad with leftover chicken and squash, and adding apple.
Snacks are typically frowned upon during a Whole30, but I honestly can’t make it through the afternoon without one. I also know that if I don’t have a mid afternoon snack with a Whole30 approved food, I’ll make a poor choice before dinner because I’m so hungry. My go-to snacks are a handful of almonds, an apple with almond butter and cinnamon, a lettuce wrap with approved turkey, or a Larabar. I learned during my last Whole30 to always keep a Larabar or a bag of nuts in my bag for an emergency snack when I’m out and about.
How I’m Feeling…
Overall, I’m feeling fine. I had a dull headache and was really tired for the first few days but that stopped for me around day four. I’ve been trying to get some form of exercise each day, typically walking on the treadmill and stretching/doing a little yoga. Between my eating habits and walking some in the afternoon during naptime, I find that I’m not reaching for my afternoon iced tea like I was and most days my caffeine intake is limited to a cup of coffee with almond milk and cinnamon in the morning. I also haven’t had any trouble with constipation, which can sometimes occur at the beginning.
What’s the Hardest Part…
For me, the hardest part is definitely not having my morning mocha. The coffee with almond milk is fine, but I just don’t get excited about it like I do when I start my day with a cup of hot chocolaty coffee goodness.
And if I’m being honest, I miss wine. It was fine the first few days but I definitely missed having a glad of red wine this weekend. I’ve been swapping out my wine though for a cup of hot rooibos tea in the evenings and I’ve been really enjoying that.
What I’m Doing Differently This Week…
I’m doing a better job with meal planning all of my meals this week than I did last week. I started out strong but then fizzled out on Thursday, which is why I was eating eggs for dinner every night. I also had to eat a couple of breakfasts/lunches on the go and made smoothies for them. While the ingredients were all compliant (almond milk, almond butter, dates, cinnamon, cacao powder, spinach and ice), I know technically I should be eating my meals and not drinking them.
