Well that weekend flew by! It felt like spring here in Ohio and we tried to soak it in as much as possible. I hope you all had a great weekend too.
Today is Day 12 for me on my Whole 30 plan. Overall, I’m doing well on it. Most days, it’s not so bad but there are other days that I’m totally over it. The weekends are the hardest for me, mostly because
I want wine and chips I’m not as good about meal planning and cooking. Next weekend, I’m going to try to be a little more proactive about it going into the weekend. I also had a little stomach bug last week and I thought that was the end of my Whole 30, but once I started eating again I wanted things like apple sauce and sweet potatoes (which are compliant) so I decided to stick with it. I also broke down and bought some Larabars to have on hand when I’m out running errands and I’m desperate for something to eat.
And full disclosure: I may have had an almond milk mocha from Starbucks yesterday. I was tired, I was cranky, and I caved. I only had two pumps of the mocha syrup added so it wasn’t too sweet but it was most definitely not compliant. I’m back on track now though and I’m trying to stick it out. #mochasaremyweakness
So what have I been eating this week?
bacon/potato/greens hash with a fried egg
half a sweet potato with ghee and salt
sweet potato “toast” with Wholly Guacamole
greens/pan-fried potatoes/lox/over-easy egg/pickled red onions
The dish with the lox was definitely my favorite breakfast I’ve had so far since starting. Such a great combination!!
For lunch, I made a chicken salad earlier in the week and then used it in different ways for my lunches:
chicken salad lettuce wraps with tomato and olives
chicken salad over lettuce with tomatoes and olives
chicken salad lettuce wraps with giardiniera
salad with leftover barbacoa and pico
This dressing was the secret to my chicken salad. It’s Whole 30 approved and really good!
Caesar Chicken Salad
2 chicken breasts, cooked and shredded
1/2 c. celery, diced
1/4 c. red onion, diced
1/3 c. Tessemae’s Creamy Caesar Dressing
salt and pepper, to taste
I tapped into several recipes from Against All Grain this week for my dinners. They not only satisfied me but my entire family liked them.
spaghetti squash with meat sauce (I mixed a little squash in with some spaghetti for the kids)
chipotle barbacoa on lettuce with pico and guacamole
Overall, I’m feeling pretty good. I think my joint pain has improved and my belly bloat is way down. I had a lot of aches when I was sick for a couple of days but it’s better now. I still have some achiness in my back but I’m hoping a trip to my chiropractor today will help. I’m back to my pre-pregnancy weight and my clothes are fitting again, which makes me feel like a new woman! I’m also trying to get more exercise but I’m not quite where I want to be with that.
So other than that mocha, it’s going well and I’m trying to keep at it!
