Happy Hump Day! I hope your week has been going well. Mine has been low key and has consisted of daily naps, which has been glorious! Last week was super busy and my sister and her family came to visit over the weekend, which was also a busy one. We had a great weekend but it’s been nice to have some down time and try to get everyone back on track with their sleep.
Despite our hectic week, I have been trying to cook more. Although it still doesn’t completely feel like fall around here, the weather is cooling off some so I’ve been craving more comfort foods. Hectic schedules also means I pull my slow cooker out more regularly. There are few things I enjoy more than making dinner and cleaning up the meal prep early in the day!
My Sausage, Potato and Spinach Soup was on the menu last week. It’s super easy and family friendly. The baby eats the chunks out of it and my little guy will eat pretty much anything with sausage in it. He complains about the spinach, but he tolerates it. You can use any kind of sausage you prefer in this one: pork, chicken, turkey, mild, spicy and you can find the recipe here.
So this picture does not do this meal justice because I snapped it as I devoured my dinner and then ran out for a meeting. I tried Skinnytaste’s Salisbury Steak Meatballs last week and we all loved it! I used to love those Salisbury steak TV dinners as a kid and this was reminiscent of that. It just needed some mashed potatoes and a side of peas (which I have never really liked!) I don’t know about you but both of my kids will eat anything in the form of a meatball. I served them on top of mashed cauliflower, which my little guy tolerated but my baby girl would not touch. I substituted gluten free bread crumbs and flour and I added a little more tomato paste and left out the egg due to my little guy’s egg allergy. I also doubled the gravy. #becausegravy

I also put my Fish Tacos with Chipotle Aioli on the menu for the weekend while my sister was visiting. My brother-in-law is a vegetarian and this is an easy meal that looks impressive and will accommodate a lot of dietary restrictions. My little guy had the fish on his taco with beans, cheese, sour cream and guacamole while my baby girl ate all of those same ingredients but deconstructed. I have also had buffalo chicken on my mind this week so one night I made pasta for the kids and this salad for me. As a general rule, I try not to serve the kids a different meal than what my husband and I have but sometimes, it just makes life easier.
This combination is the secret to me getting my gluten/dairy free buffalo chicken craving satisfied. On a salad, a wrap or a sandwich, it always satisfies!
