Hello friends! I hope you all had a fabulous weekend and all of you Mamas out there had a wonderful Mother’s Day. I had a full day of yard work on Saturday and then a great day with (and without!) my family yesterday. It was a great day of church with the family, lunch out, a mocha from Starbucks, alone time, mimosas and dinner with my in-laws. Somehow my kiddos missed the memo that it was Mother’s Day in the morning, and there was an incident over sausage at breakfast. But then the day got better
or maybe it was the mimosas! It’s always so nice to have an excuse to take it easy for a day and let your family pamper you.
It was also a bittersweet day for me because there were a lot of families out there who I was thinking about and praying for…some who lost their mothers this year, two moms out there who were facing the anniversary of their sons deaths yesterday, and a mom who was spending another day in the hospital with her sweet baby girl when she was hoping they would all be home together by now. I pray for strength, support and love for these families every day.
Today, I’m giving you a peek at what I’ve been cooking lately. It’s been awhile since I’ve done one of these posts, mostly because my meals haven’t been worth mentioning lately. Since I had surgery last month, we’ve been keeping things pretty simple over here, which means a lot of Chipotle, and some Stouffers lasagna for the family. I’m feeling better now though and I’m trying to clean up our diet and get back into our regular routine. Plus swimsuit season is coming, so there’s that.
For me, the first step to cleaning up our diet is to take the time on Sundays to prep healthy snacks. I clean and cut up a bunch of veggies, I make my spiced nuts, and I try to make some kind of a healthier treat for the kids to eat during the week (like these). Meal planning is also key…for all meals and not just dinner. I hard boiled some eggs for my husband’s breakfasts and I made sure to make enough each night for dinner so he and I would both have leftovers for lunch the next day.
I found another winning recipe in my Skinnytaste Fast and Slow cookbook: Sausage, White Bean and Escarole Soup. I simply replaced the escarole with spinach because I had some on hand.
For Taco Tuesday, I made barbacoa with a Frontera seasoning pouch. I absolutely love all of these pouches! I love their real ingredients and they make dinner so easy!! Be sure to check the ingredients though because a couple of them contain gluten and/or dairy. I served the barbacoa on cauli-rice and topped it with lettuce, Frontera Tomatillo Salsa and Wholly Guacamole. So easy and so yummy!!
I also decided to try a vegan meal one night last week and made Lentil, Quinoa and Cauliflower Tomato Soup. I saw the recipe in Shape magazine when I was at the hair salon. This is a modified version of the recipe I used. I have to say, it was okay. As much as I want to like tumeric because I know it’s good for me, I just don’t. I also have to say that between the quinoa, lentils and cauliflower, it was all way too much for my digestive system! If you like these flavors and can handle the ingredients though, give it a try!
On Friday night, we kept things simple with burgers and tots.
This week, the weather is supposed to be really nice and I have a ton of work to do outside so I’m planning a week of super simple dinners which will include a grilled protein with a side of veggies and a salad.
